Baked Almond Chicken Teriyaki

Just made this for dinner tonight and it’s so delicious I have to share!

Serving size: 1 (adjust accordingly for more servings)

Ingredients:

1 chicken breast, cubed

1-2 tbsp low sodium teriyaki sauce

chopped almonds

1/4 chopped onion (I used red, but white onion or shallots would probably be good too)

1/4-1/2 cup steamed and chopped baby broccoli

sesame seeds to taste

Instructions:

Combine ingredients above in a bowl and mix

add 1 tbsp olive, smart balance, peanut or canola oil and 2-3 tbsp water (the secret to juicy chicken!) in an oven safe baking pan.  Preheat oven to 375.  Add chicken mixture to baking pan, bake for 20-25 mins (or until chicken is no longer pink in the middle)

Eat by itself, or over brown rice, ENJOY!
