Healthy Italian Dish – “Meat Sauce And Veggies”

On to the RECIPE.
INGREDIENTS
1LB package grass fed ground beef (or you can sub out whatever kind of ground meat you like here)
1/2 red onion, finely chopped
1cup your favorite mushrooms, (I used crimini), finely chopped
2 cloves garlic, minced
2 cups spinach, chopped
salt to taste
Italian seasoning – I have a mix called Herbs of Italy, it’s basil, parsley, and oregano-all the good stuff 🙂
1/2-1cup sauce (homemade or in a jar, don’t crucify me if you’re a “super Italian” for using sauce from a jar, my aim here is convenience, if I had all weekend I’d make my own and it would be fucking awesome)
1 cup uncooked gluten free pasta of your choice
1 tbsp coconut oil (been hearing bad stuff about cooking with olive oil on high heat so I use coconut, if you prefer olive, go for it)
INSTRUCTIONS
1. In a large frying pan saute onions and garlic in coconut oil over medium heat first for 2-3 minutes.
1a. Take a minute to enjoy how AMAZING your kitchen (and hopefully your whole house) smells right now.
1b. Add mushrooms (adding a little bit of water will help the mushrooms cook faster if you’re in a hurry, just a tbsp or tw0). When the onions and mushrooms are almost soft, add the ground beef to the pan and “chop it up” with a wooden spoon to spread it out and mix with the onions, garlic and mushrooms.
2. Boil water and add pasta. Cook with a little bit of salt and olive oil (so it doesn’t stick)
3. When the meat is almost cooked, add the spinach to the pan.
4. When the spinach is cooked, add the sauce and the italian seasoning. Stir and simmer for a few minutes.
5. Strain and rinse pasta, add to pan.
6. Mix everything together and ENJOY!
Serves 2-4 (depending on how hungry you are)
