Apple Cinnamon Muffin Recipe – Gluten Free!
I’ve been casually gluten free since December (casually meaning like 80% of the time), so I’ve been experimenting with some recipes for when I make the full transition to 100% of the time (and by 100% I probably mean like 98% because if you think I’m never eating a real piece of cake or bread ever again…you’re out of your mind).
When I posted this picture to Facebook and Instagram last week, requests for the recipe were out of control…
Here’s the recipe:
*as always adjust amounts to suit however many people you need to serve. I only wanted a small amount.
INGREDIENTS:
3/4 cup gluten free baking mix (great substitutes could be alternative flours like almond flour, coconut flour, garbanzo flour, etc)
1/2 tsp gluten free baking powder
1 small apple finely chopped
handful of cashews finally chopped
2 eggs
1 tsp raw honey (agave or your preferred sweetener work, too)
cinnamon to taste (I love it so I put about 1 tsp)
INSTRUCTIONS:
Combine ingredients in a mixing bowl.
Pre-heat oven to 350 (I prefer to convection bake things these days)
Line a muffin pan with holders and distribute the mix evenly
Bake for 15 minutes or until you can stick a fork or toothpick in without leaving anything on them.
