Fast Healthy Meals: How to Make Meatloaf (Delicious!)

No, weirdo.  I’m not talking about this Meatloaf!


I’m talking about the kind that you eat.  Not your grandma’s recipe with all the gravy that isn’t healthy, either.

My meatloaf is a fast healthy meal, using ground turkey, grass-fed beef, or ground chicken (hormone and antiobiotic-free, preferred).  I’m calling this recipe an “accident” because I decided randomly what to throw into it. Luckily it came out AMAZING! Otherwise you probably wouldn’t be reading about it.

How to make a meatloaf…THE RECIPE:


1 lb ground meat of your choice (I used grass-fed beef for this one)

1 can or jar of diced tomatoes

3 whole roasted red peppers, diced

1 red onion, diced

1 egg

1/3 cup oat bran

seasonings to taste: garlic, sea salt, basil, oregano, pepper


Pre-heat oven to 400.

Combine all ingredients in a large mixing bowl.

Wash your hands.

Get up in there like an Italian grandma and mix it up

Form into a loaf

“Grease” a cooking pan (I used a glass one and non-stick cooking spray), mold it into a “loaf” and bake for 30-35 minutes

*Serves 4-6*
